Pâte Brisée

Yield: 2 pie crusts


  • 3¼ c pastry flour
  • 1½ tsp salt
  • 1½ Tbsp sugar
  • 1½ c butter, chopped
  • ¼ c ice water


Put dry ingredients in food processor and process until mixed. Add butter and pulse until the mixture resembles meal with pea-sized chunks.
With the machine running, add ice water through the feed tube, just enough so that the pastry comes together.
Remove the dough and put it into plastic wrap, and pat it into a thin rectangle. Divide it in half, and chill each piece for at least an hour before using.
