Chocolate Chip Cookies

Yield: 2 dozen

Ingredients

  • 60 ml milk
  • 3½ cm vanilla bean
  • 180 g butter
  • 200 g sugar
  • 145 g brown sugar
  • 3 eggs
  • 420 g flour
  • 1 tsp baking soda
  • ¼ tsp cinnamon
  • ¾ tsp salt
  • 25 g grated chocolate
  • 240 g chocolate chips

Directions

Put the milk in a small saucepan and scrape the vanilla into it. You can save the pod for vanilla sugar, or throw it in, too. Scald very briefly, then let cool. Remove the pod if you put it in.
Cream the butter and the sugars together. Add the eggs and milk and mix well.
In a separate bowl, mix together the flour, baking soda, cinnamon, grated chocolate, and salt. Add these to the wet ingredients and mix just until combined. Stir in the chocolate chips right before everything is fully mixed; try not to overmix.
Form into logs and freeze for at least 1 hour before baking.
Slice cookies from the log and bake on a greased or parchment-covered baking sheet at 175°C/350°F for 12-15 minutes, or until just brown around the edges.
Let sit for about 1 minute, then remove to wire racks to cool. Keep any extra dough frozen.
